About Me

My photo
Hi all! My name is Becca and I am a 21 year old from Berkshire, England with an interest in all things cake. I have only been baking for the past couple of years and if someone had told me 5 years ago that I would be a passionate cake maker at the age of 21, I'm afraid to say I probably would have laughed in their face! I have had many cake disasters in the past (including a Barbie cake for my friend's 16th Birthday that was still raw in the middle when she cut into it...) However one Christmas I opened my stocking to find a Giant Cupcake making kit, and hey presto, my love for all things sweet emerged. I have developed this blog as a way of sharing my baking experiences with others. I love to read other baking blogs, you can learn so much from them and discover some great new ideas. Plus I just love looking at photos of yummy scrummy cakey goodness ;) (possibly a touch of 'food pornography' going on there!) Whilst I am still on a massive learning curve with my baking, I will share any tips I have with you as well! Thanks for popping by! Love Becca xxx

Cupcake Variations

I wanted to post a blog sharing some of the different cupcakes I have made recently. Winter is a busy time of year in our family, consisting of many birthdays and celebrations, and therefore lots of cake making is required!

Indulgent Bannoffee Cupcakes

Ahhhhh, the bannoffee cupcake. One of my sister's all time favourites. I made these for her 18th birthday party and they went down a treat! Moist banana sponge cake filled with a caramel sauce, topped with a swirl of whipped cream and a slice of banana, drizzled with more caramel (or toffee...whatever you want to call it!)

I think the whipped cream on top makes a nice change to the standard buttercream. My boyfriend disagrees. Don't get me wrong, I love the richness of buttercream frosting, but I think coupled with the rich sauce and the flavour of the cake, whipped cream finishes it off nicely :)
Word of warning though...don't add the banana slices to the cupcakes until you are just about to serve them! Soggy, brown banana slices don't make the nicest cake decoration! :)

Eat Me Cupcakes

I made these for my 21st Birthday party. I wanted something that would remind me of my childhood which is where the idea of Alice in Wonderland came in. Whilst at Cake International back in November I saw the perfect cupcake wrappers which were Alice in Wonderland themed, complete with little cutouts of the Cheshire cat, a teapot and the Mad Hatters hat! I wanted to keep the design simple so settled on the well known 'eat me' signs. Paired with whimsical colours, I think they look pretty sweet :)

Sweetie Cupcakes

Give me anything sweet-related and I will love you forever. I recently wandered into my local Old Fashioned Sweet Shop in Reading and had a 'light-bulb' moment.

*PING!*

My head was full of images of cakes overflowing with wonderful, sugary goodness. I was so excited to get baking I bought a big bag of giant swirly lollies, jelly snakes, candy necklaces, and jelly buckets and spades. At home, I whipped up a batch of vanilla cupcakes, brightly coloured frosting and piled them high with sweeties. I felt like I was 7 years old again!

Gloriously simple, these are the perfect treat to keep the kids happy (and that includes all the big kids out there!). What I love about these is you can go as mad as you like with the sweets and pick and choose your favourites to scatter on the top. I think I might take a trip to the sweet shop again and buy some Fruit Salads, Pear Drops, Dolly Mixture....(my mouth is watering at the thought of it).

Happy Baking!
